These Keto Almond and Coconut Sandies are just what you need! 🌰🥥

Ingredients:
1 1/2 cups almond flour
1/2 cup unsweetened shredded coconut
1/4 cup powdered low-carb sweetener (erythritol, monk fruit, or stevia)
1/4 cup unsalted butter, softened
1 egg
1/2 tsp vanilla extract
1/4 tsp almond extract (optional for extra almond flavor)
Pinch of salt
1/4 tsp baking powder

Directions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the almond flour, shredded coconut, sweetener, baking powder, and salt.
Add the softened butter, egg, vanilla extract, and almond extract (if using). Mix until the dough comes together and is smooth.
Using your hands or a cookie scoop, form the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet.
Flatten each cookie slightly with the back of a spoon or your fingers to form a sandy shape.
Bake for 12-15 minutes, or until the edges of the cookies turn golden brown.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
